Seafood Processing Industry

The seafood processing industry is one of the key sectors in Vietnam, making a significant contribution to the national economy. With a coastline stretching over 3,260 km and a dense network of rivers and canals, Vietnam possesses abundant seafood resources, creating favorable conditions for the development of the seafood processing and export industry.

Central Seafood Joint Stock Company

Central Seafood Joint Stock Company (FMC), established in the 1980s, has grown over 41 years to become a leading entity in Vietnam's seafood processing, trading, and export sector. With its strategic location in Binh Dinh province, which has abundant marine resources, the company has built a solid reputation both domestically and internationally.

Factory Size, Maximum Capacity, and Current Operations

  • Location: 01 Bui Quoc Hung Street, Tho Quang Ward, Son Tra District, Da Nang City
  • Area: 30,000 m²
  • Cold Storage: 4,000 m², with a storage capacity of up to 3,000 tons
  • Maximum Capacity: The company's plant has a maximum processing capacity of 50,000 tons of seafood per year. It is one of the largest seafood processing facilities in central Vietnam, featuring modern automated lines imported from Japan and Europe.
  • Current Capacity: At present, FMC operates at a capacity of 40,000 tons per year, fully meeting the needs of its domestic and international partners.

Frozen Seafood Processing Procedure

  • Harvesting and Transportation: Seafood is freshly harvested from the sea or from aquaculture farms.
  • Transportation: After harvesting, seafood is quickly transported to processing facilities under cold conditions to prevent spoilage.
  • Preprocessing and Cleaning: Seafood is washed with cold water to remove impurities and dirt. Inedible parts are removed, and the seafood is cut into portions (such as chunks or fillets) based on product requirements.
  • Chilling and Pre-Freezing: Seafood is chilled to near freezing to slow down microbial activity and chemical processes. This quick chilling step prepares the seafood for freezing, reducing the formation of large ice crystals and preserving the structure and quality of the meat.
  • Quick Freezing (IQF): Each piece of seafood is individually quick-frozen at extremely low temperatures, typically below -30°C to -40°C. This preserves the structure, color, flavor, and nutritional value.
  • Packaging and Storage: After freezing, seafood is vacuum-sealed or protected to prevent oxidation and moisture loss. The product is stored in cold storage at temperatures between -18°C and -25°C to maintain quality during storage and transport.
  • Inspection and Sterilization: Quality checks include sensory evaluation (color, flavor) and microbiological testing. Some products undergo high-temperature sterilization before final packaging to ensure food safety.
  • Distribution and Consumption: Products are delivered to distributors, supermarkets, and retail outlets domestically and internationally. Frozen seafood is ready for consumption after careful thawing.

The freezing process requires strict control of factors such as temperature and time to ensure the final product is of the highest quality and safe for consumers.

Quality Standards

Frozen and canned products from Vietnam have continuously improved in quality by adopting international standards such as ISO, HACCP, and BRC. These standards not only help products meet the stringent requirements of export markets but also enhance consumer trust. Vietnam's frozen and canned products stand out for their fresh flavor, natural color, and high nutritional value. These products have established a strong position in international markets, directly competing with products from other countries.
